This soup is a recipe from my Aunt. She made it one Christmas many years ago and it's been a staple in our house ever since. It is a great way to use up leftovers. I had made a turkey breast in the crock pot two days ago and had just the perfect amount left for this soup. I didn't have any wild rice on hand, so I'm using some Basmati rice I already had in the cupboard. I've made it with minute rice in a pinch and that worked, too! You have to make a roux, but don't be scared if you've never made one. It's just a fancy word for soup thickener.
Turkey Wild Rice Soup with Bacon
3 cans (14.5 oz.) chicken broth
1/2 C. wild rice
1/2 C. butter
3/4 C. flour
1/4 tsp. poultry seasoning
1/2 tsp. salt
1/8 tsp. pepper
2 C. milk
8 slices bacon - crisply cooked & crumbled
1 1/2 C. cooked turkey pieces
- In large pot, combine broth and rice. Bring to a boil. Reduce heat, cover and simmer until rice is tender.
- Melt butter in a pan. Add flour and seasonings. Cook 1 minute stirring constantly until smooth and bubbly. Slowly add milk. Cook until thickened while stirring.
- Slowly add this to broth and rice. Scooping it up with a whisk and whisking it in works well.
- Add turkey and bacon pieces. Heat through. Do not boil.
